UHT奶,又稱常溫奶、高溫奶、超高溫瞬時消毒奶、超高溫熱處理奶,其生產(chǎn)工藝是在137~145攝氏度下加熱4~15秒。因為高溫處理,牛奶的一些不耐熱營養(yǎng)成分如維生素等會遭到破壞,其中的乳糖也會焦化,蛋白質(zhì)與乳糖還會發(fā)生一定的美拉德反應,使牛奶褐變,并破壞牛奶原有的風味。
